Instant Pot Broccoli-Cheddar Soup

 Quick, easy, and absolutely delicious! Enjoy!
Ingredients:
-1 Tbs extra virgin olive oil
-1 onion, diced
-3 cups chicken broth
-2 small heads (4 cups) broccoli florets
-1 carrot, peeled and shredded
-1 tsp salt
-1/4 tsp nutmeg
-1 1/2 cups heavy cream
-2 cups shredded cheddar cheese
-1 Tbs hot sauce
Directions:
Heat the oil in your Instant Pot, set on saute. Add the onion, give it a good stir, and cook for 3-4 minutes. Turn the IP off. Add the broth, broccoli, carrot, salt, and nutmeg. Mix well. Cover with the lid and secure the valve in the sealed position. Set on HIGH manual pressure for 4 minutes.
Do a natural release. Stir in the cream. Turn the IP on saute and add the cheese and hot sauce. Mix well and simmer for a couple of minutes.
Ladle into bowls and enjoy! Yum!
