Lexie's Focaccia Bread with Herbs

 My cute Lexie made this super yummy focaccia to go with her Tomato-Basil Soup. What a fantastic combination! The bread is moist and packed with flavor. So wonderful! Enjoy!
Ingredients:
-1 cup warm water
-1 1/8 tsp instant yeast
-1/2 tsp sugar
-2 cups flour
-1 tsp salt
-2-3 Tbs extra virgin olive oil
-1/2 tsp dried rosemary
-1/2 tsp dried parsley leaves
-1/4 tsp dried thyme
Directions:
Mix together the water, yeast, and sugar. Let it sit for a minute.
Mix the flour and salt. Add the yeast mixture and combine until smooth. 
Cover and refrigerate for at least 8 hours or overnight.
Pour about 1.5 Tbs oil in round 8-inch glass cake pan and spread evenly. Place the dough on top and smooth it out. 
Cover and let it rise on the counter for 2 hours or until the dough fills the pan (might take an extra 30-60 minutes, depending on how warm your kitchen is).
Preheat the oven to 425 F.
Using your fingers, poke shallow holes in the dough. Drizzle some extra olive oil on top (1/2-1 Tbs).
Sprinkle the herbs evenly on top. 
Bake in preheated oven for about 25 minutes or until top is golden brown. Enjoy!
