Roasted Gnocchi with Sausage and Veggies

This is one of those comfort meals that you wish to never end. The flavors are outstanding in this dish. It's also super easy to put together and VERY delicious! Enjoy!
Ingredients:
-2 lbs bulk pork sausage, casings removed
-2 garlic cloves, minced
-1 tsp dried oregano
-1/2 tsp crushed red pepper flakes
-3 bell peppers (different colors), seeded and thinly sliced
-1 red onion, halved and thinly sliced
-1 lb cherry tomatoes, halved
-2 Tbs extra virgin olive oil, divided
-salt and pepper
-1 lb potato gnocchi
-1/4 cup shredded Parmesan cheese
-1 tsp dried parsley leaves
Directions:
Preheat oven to 425 F.
On a large baking sheet, crumble the sausage. Add the garlic, oregano, red pepper flakes, bell peppers, onion, and tomatoes. Give it a good stir. Drizzle 1 Tbs of the oil and sprinkle with some salt and pepper (about 1 tsp each). Mix very well. Combine the gnocchi with the remaining oil, cheese, parsley, and 1/2 tsp salt. Mix very well. Combine the gnocchi with the remaining oil, cheese, parsley, and 1/2 tsp salt. Mix very well and add to the sausage mixture.
Once everything is well combined, roast in preheated oven for 20 minutes.
Switch the oven to HIGH broil.
Broil for about 3-4 minutes (keep and eye on it to not burn).
