Slow Cooker Nacho Grande Soup
Easy and delicious, this soup is perfect on a cold day. It's hearty and super tasty. Enjoy!
-1 lb extra lean lean ground beef (if not using extra lean, make sure to drain the fat after cooking, before placing in slow cooker)
-1 onion, finely chopped
-1 garlic cloves, minced
-1 1/5 cups milk (at least 2%)
-1 (1 oz) packet taco seasoning
-1 (10.75 oz) can condensed cheddar cheese soup
-1 (10 oz) can diced tomatoes with green chilis, NOT drained
-1 cup shredded cheddar cheese
For serving:
-shredded cheddar cheese
-sour cream
-tortilla strips
Directions:
In a large skillet, brown the beef along with the onion and garlic. Once the beef is browned, transfer mixture to slow cooker.
Add the milk and taco seasoning. Mix well. add the soup, tomatoes, and cheese. Give it a good stir, cover and cook on LOW for 4 hours.
Ladle into bowls and top with more cheese, sour cream, and tortilla strips. Enjoy!
