Leek-Potato-Cauliflower Soup
So tasty, so hearty, so delicious! This soup sure hits the spot on a cold day. Enjoy!
-4 Tbs unsalted butter
-3-4 leeks, white and light green parts only, thinly sliced and rinsed very well
-1 Tbs flour
-6 cups chicken or vegetable broth
-3 large potatoes, peeled and cut into chunks
-1 small head cauliflower, cut into small florrets
-1 tsp salt
-1/2 tsp pepper
-4 oz Swiss cheese, shredded
Directions:
In a large saucepan, melt the butter. Add the leeks and cook for 5 minutes or until golden brown.
Sprinkle the flour on top, mix well and cook for 1 minute. Add the broth, potatoes, and cauliflower. Give it a good stir, cover and bring to a boil. Once boiling, lower the heat and simmer, covered, for 10 minutes.
Remove from the heat and season with the salt and pepper. Using a potato masher, quickly mash the veggies a little. Finally, stir in the cheese and mix until melted.
Ladle into bowls and enjoy! YUM!
