Instant Pot Creamy Mediterranean Orzo with Chicken in Lemon Sauce

 This is a little spin on the popular Greek soup avgolemono. It comes out super creamy and tender. It's super quick, easy and absolutely delicious! Enjoy!

Ingredients:
-4 cups chicken broth
-1 cup orzo
-2 large chicken breasts, skinless, boneless
-salt and pepper
-2 Tbs fresh lemon juice (half of lemon)
-1 large egg
Directions:
Coat the bottom of your IP with cooking spray. Add the broth and orzo. Give it a good stir. Place the chicken right on top and season with some salt on top.
Secure the lid on top with the valve on the sealed position. Cook on HIGH manual pressure for 4 minutes. Do a quick release.
Once done, remove the chicken and cut into chunks.
Stir the orzo and set the IP on saute. Return the chicken chunks and cook for a couple of minutes.
While that's going on, in a small bowl, whisk together the lemon juice with the egg. Once nice and smooth, add about 1 cup of the broth from the IP, so that the egg doesn't scramble. 
Turn off the IP and remove the inner pot onto a hot pad. Pour the lemon mixture over the orzo, season with some salt and pepper,  and give it a good stir. Let it sit for a couple of minutes. Serve and enjoy! YUM!
