Instant Pot Chicken Parmesan Meatballs in Tomato Sauce

 This is so easy and so delicious! It's like chicken parmesan, but in a different form. It's serious comfort food. I served ours with garlic bread and it was absolutely perfect. Enjoy!

Ingredients:
For meatballs:
-1 lb ground chicken
-1 Tbs dried onion
-3 garlic cloves, minced
-1 tsp dried parsley leaves
-1/2 cup shredded parmesan cheese
-1/4 cup Italian style bread crumbs
-1/2 tsp salt
-1/2 tsp pepper
-1 large egg
-2 Tbs milk (at least 2%)
For sauce:
-1 (28 oz) can crushed tomatoes
-1/2 cup water
-1 tsp salt
-1 tsp pepper
-1 tsp dried parsley flakes
Directions:
Combine all meatball ingredients and, using your hands, shape into balls.
Heat up the IP. Coat generously with cooking spray. When hot, add the meatballs in a single layer. Quickly spray the top of the meatballs with cooking spray. Brown the meatballs on all sides and turn off the IP.
Add the remaining ingredients. Cover with the valve in the sealed position. Set to manual HIGH pressure for 5 minutes.
Do a quick release. Dish up and enjoy! YUM!
