Instant Pot Texas Chili

In case you didn't know, Texas chili is an amazing concoction, but without beans, which is appealing to my kids because they claim they don't like beans. Anyhow, beans or not, this is a delicious dish, made even better by the speed of the Instant Pot which cooks this beauty in an hour. The beef is super tender and everything is super delicious. Serve with hot bread or cornmeal. Yum! Enjoy!
Ingredients:
-2 Tbs vegetable oil
-1 large onion, finely chopped
-3-4 garlic cloves (depending on their size), minced
-1 jalapeno, seeded and chopped
-1 jalapeno, chopped (leave the seeds on)
-3 lbs beef, cut into chunks
-2 tsp salt
-1 Tbs chili powder
-1 (28 oz) can crushed tomatoes with puree in the juice
-1 cup water
-2 Tbs white vinegar
-shredded cheddar cheese, for topping
Directions:
Turn your IP on saute. Once hot, add the oil. Add the onion, garlic, and jalapenos. Give it a good stir and cook for 3-4 minutes. Add the beef, salt, and chili powder. Give it a good stir and saute for 2 minutes. Turn off the IP.
Add the tomatoes and water. Mix well. Secure the lid on top with the valve in the sealed position. Set to manual on HIGH pressure for 60 minutes.
Do a quick release. Remove the lid and stir in the vinegar. Ladle into bowls and top with cheese. YUM! Enjoy!
