Easy Pumpkin Cake

 So easy, so moist, so delicious! This is such a treat, perfect for an end to a meal. The lemon glaze is optional, but it does make for a wonderful addition to the cake. Enjoy!

Ingredients:
-2 cups sugar
-4 large eggs
-1/2 cup vegetable oil
-1/2 cup milk 
-2 tsp vanilla extract
-1 (15 oz) can pumpkin
-a pinch of salt
-1 Tbs pumpkin pie spice
-1 Tbs baking powder
-3 cups flour
For the glaze:
-3/4 cup powder sugar
-1.5 Tbs freshly squeezed lemon juice
Directions:
Preheat oven to 350 F. Coat the bottom and sides of bundt cake pan with baking spray (the one with flour and butter). Set aside.
Cream the sugar, eggs, and oil. Once well mixed, add the milk, vanilla, pumpkin, salt spice, and baking powder. Mix well, then add the flour, half of cup at the time.
Pour into prepared pan. Bake in preheated oven for 50-55 minutes or until toothpick comes out clean.
Remove cake from oven and cool in pan for 10 minutes. Remove cake onto wire rack and cool completely.
Whisk together the glaze ingredients.
Slice cake and drizzle with some glaze. YUM! Enjoy!
