Veggie-Pasta Salad with Honey-Dijon Dressing

This is quick, easy, and delicious! So yummy! Enjoy!
Ingredients:
-1 lb small shells
-1 zucchini, chopped
-1 small eggplant, chopped
-1 cucumber, chopped
-1 yellow bell pepper, chopped
-1.5 cups cherry tomatoes, halved
-1 cup cubed feta cheese
For dressing:
-1/3 cup extra virgin olive oil
-3 Tbs lemon juice
-2 tsp honey Dijon mustard
-1 tsp honey
-1 tsp salt
-1 tsp pepper
Directions:
Cook pasta according to package directions. Drain and rinse with cold water, to stop the cooking. Once nice and cool, pour into large salad bowl. Set aside.
Generously coat a large skillet with cooking spray (olive oil flavored is best) and heat it up. Add the chopped zucchini and eggplant. Cook for about 5 minutes or until veggies are slightly browned. Remove from stove, cool, then add to the pasta.
Add the cucumber, bell pepper, tomatoes, and cheese. Give it a good stir.
In a small bowl, whisk together the dressing ingredients. Pour over salad. Give it a good stir, then enjoy! Yum!
