Pasta and Shrimp in Lemon Sauce
Ingredients:
-1 lb rotini pasta
-12 oz shrimp, peeled, deveined, with tails removed
For sauce:
-1/4 cup pasta water
-3 lemons, zested and juiced
-2/3 cup extra virgin oil
-2/3 cup shredded parmesan cheese
-1/2 tsp salt
-1/2 tsp pepper
Directions:
Place pasta in pot of boiling salted water. Cook for 9 minutes. Add the shrimp and cook for one more minute. Drain.
While the pasta is cooking, take 1/4 cup of water from the pot and put it in a small bowl. Add the remaining sauce ingredients and whisk well.
Once the pasta and shrimp are drained, pour sauce on top. Toss until well combined. Serve immediately. YUM! Enjoy!
