Cream of Black Bean Soup
Ingredients:
-1 onion, chopped
-2 garlic cloves, minced
-1 red bell pepper, toughly chopped
-1.5 cups water
-2 chicken bouillon cubes
-2 (15 oz each) cans black beans, do not drain
-1 tsp salt
-1/2 tsp cumin
-1 Tbs lemon juice
-chives for garnish
Directions:
In a pot mix the onion, garlic, bell pepper, water and bouillons. Mix well and bring to a simmer. Cook for about 10 minutes.
Add the beans and juices, salt, and cumin. Mix well and cook for 5 more minutes.
Using an emersion blender, puree the soup. Add the lemon juice. Stir and it's ready to go. Ladle into bowls, top with some chives, and enjoy! Yum!
