Banana Cream Pie

This is super easy and perfect to use some of the more ripe bananas (but not super ripe). So delicious too! Enjoy!
Ingredients:
-1 9-inch deep shell pie crust, baked and cooled
-3/4 cup sugar
-3 Tbs cornstarch
-1/4 tsp salt
-2 cups milk (at least 2%)
-3 egg yolks, beaten
-2 Tbs butter
-1 1/4 tsp vanilla extract
-3 bananas, sliced
Directions:
In a small saucepan, combine the sugar, cornstarch, and salt. Give it a good stir and add the milk. Mix well and cook until bubbly, stirring constantly. 
Remove from stove and pour a couple of tablespoons into the egg yolks. Mix well, then add the eggs to the saucepan.
Return to stove and cook for a couple of minutes, stirring constantly. Add the butter and vanilla and give it another good stir.
Remove from stove and stir until nice and smooth.
Preheat the oven to 350 F. Line a baking sheet with foil and top with the pie shell.
Place banana slices onto the cooked pie shell. Top with the creamy pudding mixture.
Bake in preheated oven for 12 minutes.
Cool completely, top with some whipped cream and enjoy!
