Brittany's Zucchini Bisque

I've been sitting on this recipe for a few years now and kept on postponing to make it. I finally did and am so, so glad because it's instantly become a family favorite. It's so packed with flavor! Absolutely delicious! We served ours with some hot bread straight from the oven. Yum! Enjoy!
Ingredients:
-2.5 lbs zucchini, diced
-2 cup water, divided
-5 chicken bouillon cubes, divided
-2 Tbs dried onion
-1 Tbs seasoned salt
-1 tsp dried parsley leaves
-4 Tbs (1/2 stick) butter
-1/4 cup flour
-3 cups milk
-1 cup heavy cream
-1/4 cup blue cheese, crumbled
-paprika, to garnish
-sour cream, to garnish
Directions:
In a pot, mix the diced zucchini with 1 cup of the water, 2 bouillon cubes, onion, seasoned salt, and parsley. Give it a good stir and let it cook until zucchini is very tender. Using a potato masher, mash the zucchini until is nice and chunky.
In a small pan, melt the butter. Add the flour and whisk until nice and smooth. Immediately pour that beautiful roux over the mashed zucchini.
Add the milk, remaining chicken cubes, remaining cup of water, cream and cheese. Give it a good stir and simmer until thickened.
Ladle into bowls and garnish with paprika and sour cream. YUM!
