Caramel Apple Blondies

The apple-caramel combo is a match made in heaven. The danger with this is trying to not eat all of the caramel chips. They're highly addictive! LOL! These blondies are fantastic, super easy and super delicious. Enjoy!
Ingredients:
-2 sticks (1 cup) unsalted butter, at room temperature
-1 1/2 cups packed brown sugar
-1/4 tsp salt
-1 tsp cinnamon
-1 Tbs vanilla extract
-2 large eggs
-1 apple, peeled, cored, finely diced (I used Gala, but other brands work just fine)
-2 cups flour
-1 cup caramel chips
Directions:
Preheat oven to 350 F. Coat the bottom and sides of 9x13 pan with baking spray (the one with butter and flour). Set aside.
Cream the butter and sugar. Once smooth, add the salt, cinnamon, and vanilla. Mix well, then add the eggs, one at a time. Stir in the apple, then the flour, half of cup at the time. Finally, stir in the caramel chips. The batter will be thick, and that's totally fine.
Pour batter into prepared pan. Bake in preheated oven for 35-40 minutes or until golden brown and toothpick comes out clean.
Remove from oven and cool completely before cutting. YUM! Enjoy!
