Strawberry-Banana Bread

This is such a nice treat. It's a step up from regular banana bread and the strawberries add such a nice freshness to it. Super delicious! Enjoy!
Recipe yields two large loaves or 7 small loaves
Ingredients:
-2 cups sugar
-3 large eggs
-1 cup sour cream
-1/4 cup vegetable shortening
-1 Tbs vanilla extract
-1 tsp salt
-1 tsp baking soda
-1 tsp cinnamon
-2 cups strawberries, hulled and chopped
-3 ripe bananas
-3 cups flour
Directions:
Preheat oven to 350 F.  Coat bottom and sides of pans with baking spray (the one with flour and butter).  Set aside.
In your electric mixer bowl, cream the sugar and eggs.  Add the sour cream, shortening, vanilla, salt, baking soda, and cinnamon.  Mix well. Add the strawberries and mix on medium speed to break up the chunks a little.  Add the bananas and mix until nicely mashed, but still a bit chunky. Stir in the flour, half of cup at a time. 
Divide batter evenly between the prepared pans. 
Bake in preheated oven for 60-70 minutes for regular loaves or 35-40 minutes for small loaves, or until toothpick comes out clean.
Cool in pans on wire rack for 10 minutes.  Carefully, remove bread from pans and place back on wire rack to cool completely.  Slice and enjoy!
