Instant Pot Clam Chowder

Clam chowder is a big favorite for our family. This recipe is super easy, quick, and so, so delicious!! Enjoy!
Ingredients:
-1/2 cup white cooking wine
-2 (8 oz each) bottles clam juice
-2 large potatoes, peeled and cut into chunks
-2 Tbs dehydrated chopped onion
-1 bay leaf
-1/2 tsp dry thyme
-1/4 tsp cayenne pepper
-1 tsp salt
-1/2 tsp pepper
-2 Tbs butter
-2 Tbs flour
-1 cup milk
-1 cup heavy cream
-2 (6.5 oz each) cans chopped clams, with juice
-real bacon bits, for garnish
-oyster crackers, for garnish
Directions:
Pour the wine in the IP and turn in on saute. Bring to a boil, then let it simmer for about 5 minutes. Turn off IP. Add the clam juice, potatoes, onion, bay leaf, thyme, cayenne, salt, and pepper. Give it a good stir and place the lid on top with the vent in the sealed position. Cook on manual HIGH pressure for 5  minutes. Do a quick release.
While the release is taking place, quickly make a roux by melting the butter in a small pan, then whisking the flour in until nice and smooth.
Open the IP and stir in the roux. Add the milk, cream, and clams with the juice. Give it a good stir and turn the IP on saute. Cook for 5-7 more minutes.
Ladle that goodness into bowls and top with real bacon bits and oyster crackers. YUM! Enjoy!
