Chicken-Spinach-Gnocchi Soup

This is absolutely perfect on these cold winter days. Every bite is hearty and packed with goodies, and so tasty!  Enjoy!
Ingredients:
- 2 Tbs butter
-1 small onion, finely chopped
-1 large carrot, finely grated
-2 garlic cloves, minced
-2 Tbs flour
-2 cups water
-6 cups chicken broth
-1/2 tsp thyme
-1/8 tsp ground nutmeg
-10 oz baby spinach
-2 cups cooked chicken, chopped
-2 cups heavy cream
-16 oz gnocchi
-2 tsp salt
Directions:
Melt the butter in large pot. Add the onion and carrot. Give it a stir and cook for a couple of minutes. Add the garlic and cook for 30 more seconds. Whisk in the flour and make sure that all the veggies are coated with it. Cook for one minute. Add the water and broth. Stir in the thyme, nutmeg, spinach, and chicken. Give it a good stir and bring to a simmer. Reduce heat and simmer, uncovered, for 15 minutes.
Add the cream, gnocchi, and salt. Cook for 5 more minutes.
Ladle that goodness into bowls and enjoy!
