Pan-Fried Tilapia with Coconut-Ginger Sauce and Veggies

This dish is so wonderful!  It's light, yet hearty, and so full of wonderful flavors. It's inspired by a popular Brazilian dish. Make sure to give yourself plenty of time making the sauce, because it needs to simmer and reduce for a while. So good!  Enjoy!
Ingredients:
For Sauce:
-1 Tbs extra virgin olive oil
-1/2 red onion, roughly chopped
-2 garlic cloves, roughly chopped
-1 (3 inch) piece ginger root, peeled and roughly chopped
-1/4 cup white cooking wine
-1 1/2 cups fish or vegetable broth
-1 cup coconut milk
-1 tsp salt
-1 tsp pepper
For Veggies:
-2 Tbs extra virgin olive oil
-2 bell peppers, any color, finely chopped
-1/2 red onion, finely chopped
-2 garlic cloves, minced
-1 tsp dried thyme leaves
-1 tsp salt
-1 tsp pepper
For Fish:
-butter flavored cooking spray
-4-6 tilapia fillets (depends on how big they are)
-3/4 cup flour
-salt and pepper

Directions:
Let's make the sauce first. In a sauce pan, heat the oil. Add the onion and cook for 3-4 minutes. Add the ginger and garlic. Give it a good stir and cook for a couple more minutes.  Add the wine and cook for 1 minute. Stir in the broth and coconut milk.  Bring to a boil, lower the heat and cook, uncovered, for 40-50 minutes or until sauce it reduced and thickened. Once done, strain through a sieve in another pan. Season with the salt and pepper and set aside.
Heat the oil for the veggies in a large pan. Once hot, add the bell peppers and onion. Cook for 4-5 minutes, or until veggies start to soften.  Add the garlic and cook for 1 more minute. Season with the thyme, salt, and pepper.  Give it a good stir and remove from heat.
While the veggies are cooking, generously coat a large skillet with the butter flavored cooking spray.
Dredge each fillet through flour and season with salt and pepper on both sides. Fry in prepared pan for a couple of minutes on each side, or until nice and golden brown.
To serve, place some cooked rice on a plate.  Top with fish, then that yummy sauce (make sure to get enough to pour over the rice too), then with the veggies. YUM!  So good!  Enjoy!
