Santa Fe Chicken

 Here's another quick and easy dinner for a busy day. We like ours with brown rice. Enjoy!
Ingredients:
-2 Tbs extra virgin olive oil
-4 chicken breasts, skinless, boneless, cut into chunks
-1 envelope (1.25 oz) taco seasoning
-1 onion, finely chopped
-3 garlic cloves, minced
-1 (15 oz) can corn, drained
-1 (15 oz) can black beans, rinsed and drained
-1 (15 oz) can petite diced tomatoes, with their juice
-8 oz shredded Mexican cheese blend
Directions:
Heat oil in large skillet (wok works great for this). Add the chicken chunks and sprinkle with taco seasoning. Give it a good stir and cook until the chicken is golden brown on all sides. 
Add the onion, garlic, corn, beans, and tomatoes. Mix very well. Bring to a simmer and cook for about 5 minutes.
Sprinkle the cheese evenly on top. Cover with the lid and cook until nicely melted.
Serve immediately on top of (brown) rice. Enjoy!
