Alfredo Sauce Spaghetti Squash

 I love spaghetti squash. It has such a nice flavor and texture. This is a bit of work, but totally worth it. So creamy and so delicious, with a nice garlic punch. Yum!
Ingredients:
-2 large spaghetti squash
-olive oil cooking spray
-salt and pepper
-2 Tbs butter
-4 garlic cloves, minced
-1 Tbs flour
-1 cup shredded Parmesan cheese
-1.5 cups shredded mozzarella cheese, divided
-1.5 cup half and half
-dried parsley leaves
Directions:
Preheat oven to 400 F.
Line baking sheet with parchment paper.
Cut each squash in half and discard the seeds. Coat each squash half with olive oil cooking spray and sprinkle with some salt and pepper.
Place flesh side down on prepared baking sheet.
Bake in the preheated oven for 40-45 minutes or until nice and tender. Do not turn off the oven!
Using a fork, shred the flesh and place in large bowl. Keep the shells!
Melt butter in large skillet. Add the garlic and cook for 30 seconds. Sprinkle the flour and mix until smooth (a few seconds). Slowly, whisk in the half and half. Cook for a few minutes, stirring occasionally until thickened. 
Add 1/2 tsp salt and 1/2 tsp pepper. Stir in the Parmesan cheese. Mix until well melted. Stir in the shredded spaghetti squash and 1 cup of the mozzarella cheese. Mix very well.
Divide mixture evenly between the squash shells. Sprinkle evenly with the remaining mozzarella cheese. 
Place in the oven and bake for 10 minutes or until the cheese is melted. Sprinkle with the parsley leaves.
