Shrimp Salad Sandwiches

Light, easy and delicious! There's so much flavor in these sandwiches. Enjoy! 
Ingredients:
-olive oil cooking spray
-24 oz small shrimp, cut in half
-2 tsp Old Bay seasoning
-1/2 tsp salt
-1/2 tsp pepper
-1/3 cup mayonnaise
-1 bunch green onions, cleaned and chopped
-1 Tbs Dijon mustard
-1 Tbs freshly squeezed lemon juice (from about 1/2 lemon)
-2 tsp dried dill
-1 tsp rice vinegar
-brioche buns, toasted
-lettuce leaves
Directions:
Generously coat a large skillet with the olive oil cooking spray. Add the shrimp and season with the Old Bay, salt, and pepper. Give it a good stir and cook for a couple of minutes. Remove from the stove.
In a large bowl, mix together the mayo, green onions, mustard, lemon juice, dill, and rice vinegar. Once well mixed, add the cooked shrimp. Mix very well. 
On the toasted buns, add some lettuce leaves, then some of that delicious shrimp salad. Enjoy! YUM!
