Roasted Haddock

 This is such a treat. The fish is super moist and packed with so much flavor. An easy and delicious meal. Enjoy!
Ingredients:
-cooking spray
-salt and pepper
-3 Tbs butter
-2 shallots, finely diced
-1/2 cup plain breadcrumbs
-1/2 tsp grated lemon zest
-2 tsp dried parsley leaves
-2 tsp dried chives
-2 Tbs extra virgin olive oil
-24 oz haddock fillets
Directions:
Preheat oven to 400 F. Coat a baking sheet with cooking spray and sprinkle with some salt and pepper.
In a small skillet, melt the butter. Add the shallots and cook for a couple of minutes.
Place cooked shallots and butter into a small bowl. Add the breadcrumbs, 1/2 tsp salt, 1/2 tsp pepper, the lemon zest, parsley, and chives. Give it a good stir. Slowly, stir in the olive oil and mix until well combined.
Place the fish onto prepared baking sheet. Sprinkle each fillet with a little salt and pepper. Top with the breadcrumb mixture. Make sure to divide it evenly between the fillets. 
Roast in preheated oven for 12 minutes. Serve immediately. YUM!
