BST Pasta Salad

 "S" standing for spinach, of course! Our family loves the flavors in this easy and delicious pasta salad. Enjoy!
Ingredients:
-1 lb bacon, chopped
-1 small red onion, finely chopped
-3 garlic cloves, minced
-4 cups chicken broth
-1 lb small pasta (shells, rotini, etc)
-6 oz baby spinach, roughly chopped
-1.5 cups shredded Parmesan cheese
-1 pint cherry tomatoes, halved
Directions:
In a wok or a large pot, cook the bacon until nice and crisp. Remove onto paper towels lined plate.
Keep a couple of Tbs of the bacon drippings (discard the rest) and return wok to stove. Add the onion and saute for a couple of minutes. Add the garlic and cook for an extra minute. 
Stir in the broth and pasta. Give it a good stir, cover, and bring to a boil. Lower the heat and simmer for 10 minutes, stirring occasionally.
Add the spinach and cook for a couple more minutes.
Remove wok from the heat. Add the bacon, cheese, and tomatoes. Give it one more good stir, serve and enjoy!
