Andouille and Rice Dish
The flavors of this simple dish are outstanding! And it's super nice that it's all cooked in one dish (wok). There's also a nice kick to it from the andouille sausage. What a treat! Enjoy!
Ingredients:
-1 Tbs extra virgin olive oil
-12 oz andouille sausages, sliced
-1 onion, finely diced
-1 yellow bell pepper, halved and sliced (cored)
-1 green bell pepper, halved and sliced (cored)
-4 cloves garlic, minced
-3 cups chicken broth
-1 (6 oz) can tomato paste
-1 tsp smoked paprika
-1/2 tsp salt
-1/2 tsp pepper
-1/2 tsp dried oregano leaves
-1 cup rice
-chopped parsley, for garnish
Directions:
Heat the oil in a wok. Add the sausage and cook for about 5 minutes or until browned on both sides.
Stir in the onion and bell peppers. Cook for 3 minutes. Add the garlic and cook for one more minute.
Add the broth, tomato paste, paprika, salt, pepper, and oregano. Give it a good stir, until the paste is nicely dissolved. Once smooth, stir in the rice.
Cover and bring to a boil. Lower the heat to medium-low and cook for 20 minutes or until the rice is cooked. Make sure to stir every couple of minutes so that the rice doesn't stick to the bottom.
Serve and garnish with some chopped parsley. Yum! Enjoy!
