Ratatouille

This is such a wonderful, delicious dish. It's healthy and hearty and I like to add a little kick to ours. So good! Enjoy!
Ingredients:
-7 Tbs extra virgin olive oil, divided
-salt
-1 large eggplant, cut into chunks
-2 zucchinis, cut into chunks
-1 onion, finely chopped
-1 yellow bell pepper, chopped
-5 garlic cloves, minced
-2 lbs ripe tomatoes, chopped and keep all the juices
-1 Tbs tomato paste
-3/4 tsp sugar
-1/2 tsp crushed red pepper flakes
-a dash of dried thyme
Directions:
Heat 5 Tbs of the oil in a large pan or a wok. Once hot, add the eggplant and zucchini. Season with some salt and cook until veggies are soft and begin to brown. Remove onto a plate.
Return pan to the stove and add remaining 2 Tbs oil. Add the onion and bell pepper. Cook for about 5 minutes or until the onion is softened. Stir in the garlic and cook for a couple more minutes. Add the tomatoes and juice, tomato paste, sugar, pepper flakes, and thyme. Season with a little salt. Give it a good stir and cook for about 10 minutes, stirring occasionally. Return the eggplant and zucchini to the pan. Give it one more good stir, cook for a couple more minutes and it's done.
