Huli-Huli Chicken

While we lived in Hawai'i, we partook of this goodness many times, yet I have never made it myself. I'm not sure how authentic this recipe is, but it's what I came up with and it was absolutely delicious. Huli-huli basically means to turn. It's finger-licking good chicken. So yummy! I served ours with grilled pineapple slices and rice. Enjoy!
Ingredients:
-8 chicken thighs, skin-on, bone-in
For marinade:
-1 cup packed brown sugar
-3/4 cup ketchup
-3/4 cup soy sauce
-1/3 cup white cooking wine
-1 tsp ground ginger
-1 tsp garlic powder
Directions:
In a bowl, mix all of the marinade ingredients.
Pour half of the marinade in a large resealable bag. Keep the remaining marinade in the fridge.
Add the chicken to the marinade in the bag, making sure that it's evenly coated. Refrigerate for 8 hours or overnight, flipping the bag on the other side every few hours, to make sure that all the chicken parts get evenly marinated.
Grease a grill and place the marinated chicken. Discard the marinade from the bag. Using the reserved marinade, brush the chicken as you grill and turn every few minutes.
Once cooked through, enjoy that deliciousness with some grilled pineapple and rice. YUM! Enjoy!
