Instant Pot Pot Roast

Have I mentioned how much I love my Instant Pot? It's wonderful! This pot roast is done to perfection in a fraction of the time. The roast is super tender and so very flavorful. So yummy! Enjoy!
Ingredients:
-1 Tbs extra virgin olive oil
-2.5 lbs beef roast
-salt
-pepper
-1/2 cup red cooking wine
-1 cup beef stock
-1/2 tsp dried rosemary 
-1/2 tsp dried thyme
Directions:
Set IP to saute. When it says"hot", add  the oil. Season roast on both sides with salt and pepper and add to hot pot. Sear on both sides until beautiful and golden brow, like this: 
Turn off the IP and remove roast onto a plate. Stir in the wine, scraping the bottom of the pot to get all of hat goodness. Add the beef stock, rosemary and thyme. Stir, then return roast to IP. Cover with the valve secured in the sealed position.
Cook on HIGH manual for 60 minutes. Do a natural release (it might take about 15 minutes).
Once done, remove roast from IP. It will look like this:
Using two forks, shred that goodness. Serve immediately and top with juices from the pot. So good! Enjoy!
