Brussels Sprout-Pecan-Cranberries Salad

Simple, easy and so, so delicious! This is the perfect side dish and it goes with pretty much anything. The flavors are amazing together. Enjoy!
Ingredients:
-1 lb Brussels sprouts, trimmed and halved
-1/2 cup pecans, halved
-1/2 cup sweetened dried cranberries
For Dressing:
-3 Tbs extra virgin olive oil
-1/2 tsp apple cider vinegar
-1/2 tsp Dijon mustard
-salt and pepper, to taste
Directions:
Preheat oven to 400 F.
Line cookie sheet with foil, then spray with cooking spray. Layer the halved Brussels sprouts and pecans in a single layer. Coat the top with cooking spray. Roast in preheated oven for 15 minutes.
Remove from oven and cool.
On the bottom of your salad bowl, whisk together the dressing ingredients. Add the cooled sprouts, pecans, and cranberries. Mix well and enjoy!
