Instant Pot White Chicken Chili
This is another wonderful, delicious, easy meal to throw together on a cold, busy night. The flavors are fantastic together and everything is perfectly cooked in the Instant Pot. Enjoy!
Ingredients:
-2 Tbs butter
-2 large chicken breasts, cut into chunks
-2 tsp salt, divided
-2 tsp pepper, divided
-1 onion, finely chopped
-3 garlic cloves, minced
-2 tsp ground cumin
-1/2 tsp dried oregano leaves
-1/2 tsp ground coriander
-2 cups water
-2 cups chicken broth
-2 (15 oz each) cans great Northern beans, rinsed and drained
-2 (4 oz each) cans diced green chiles
-1 cup heavy cream
-1 Tbs cornstarch
-1 (15 oz) can corn, drained
Directions:
Set IP on saute. Add the butter. Once melted, add the chicken chunks and season with 1 tsp salt and 1 tsp pepper. Once golden brown, add the onion, garlic, cumin, oregano, and coriander. Give it a good stir and cook for 1 minute.
Turn off the IP. Add the water, broth, beans, chili, remaining tsp of salt and pepper. Give it a good stir. Cover and set the lid with the valve in the sealed position. Set on manual HIGH pressure for 15 minutes.
Do a natural release.
While the steam is being released, combine the cream and cornstarch.
Remove the IP lid and switch to saute mode. Add the cream mixture and drained corn. Cook for 5 minutes.
Ladle into bowls and enjoy! YUM!
