Instant Pot Orange Chicken
This is quick and easy, just perfect for a busy weekday meal. Serve on top of cooked rice and enjoy!
Ingredients:
-4 chicken breasts, boneless, skinless, cut into chunks
-1 cup bbq sauce (we like Sweet Baby Ray's)
-1/2 cup orange marmalade
-2 Tbs soy sauce
-2 Tbs cornstarch
Directions:
Coat the bottom of the IP with cooking spray and turn it on saute. Add the chicken and saute for about 3 minutes.
While the chicken is browning, in a bowl mix the bbq sauce, marmalade and soy sauce. Give it a good stir.
Turn the IP off and stir in the sauce. Make sure it's evenly distributed. Place the lid on top and secure it with the valve in the sealed position. Set to manual HIGH pressure for 6 minutes. Do a quick release.
Once done, turn off the IP, then immediately set it on saute. Stir in the cornstarch and cook for a couple of minutes or until the sauce starts to thicken. Turn IP off.
Serve on top of cooked rice. YUM! Enjoy!
