Churro Muffins
Ingredients:
-6 Tbs butter, at room temperature
-4oz cream cheese, at room temperature
-1/2 cup sugar
-1 large egg
-1 tsp baking powder
-1/2 tsp baking soda
-1/2 tsp salt
-1/4 tsp nutmeg
-1/2 cup milk (at least 2%)
-1 1/4 cups flour
For Topping:
-3 Tbs butter, melted
-1/4 cup sugar
-1/4 tsp cinnamon
Directions:
Preheat oven to 350 F.
Cream the butter, cream cheese and sugar. Once nice and smooth, add the egg. Beat well. Add the remaining ingredients, one at a time and keep on mixing.
Coat the bottom and sides of a 12 muffin pan with with butter flavored cooking spray. Spoon the batter evenly between the 12 cups.
Bake in preheated oven for 25 minutes or until golden brown on top.
Pour the melted butter in a small bowl. In another small bowl, mix the sugar and cinnamon.
Once muffins are done baking, remove them carefully onto a plate. Carefully, dip the top of each of them in the melted butter, then in the cinnamon sugar.
Place on serving platter and enjoy!
