Hot Roast Beef Sandwiches (with Instant Pot Roast Beef)

This is actually fairly easy to put together.  I love the freshly made roast, but if you're in a hurry, store bought already cooked and sliced will work. The sandwiches are then assembled with a yummy dressing and slices of cheese, then the whole thing is baked until the cheese melts and the buns get a bit crispy.  Super YUM!  Enjoy!
**The dressing is enough for 8 sandwiches
Ingredients:
For Roast Beef:
-butter flavored cooking spray
-3.5-4 lbs beef rump roast, trimmed of all fat
-1 Tbs seasoned salt
-1 Tbs garlic powder
-1 Tbs onion powder
-1 Tbs pepper
-2 cups beef broth
-2 Tbs liquid smoke
For Dressing:
-1/2 cup mayonnaise
-3 Tbs horseradish mustard
-2 tsp Worcestershire sauce
-1 tsp garlic salt
-1 tsp onion powder
-2 Tbs poppy seeds
For Sandwiches:
-sandwich buns (I used brioche buns)
-sliced cheese (any kind you like)
Directions:
We'll make the roast beef first. Coat your Instant Pot with butter flavored cooking spray and set on saute.  In a small bowl, combine the salt, garlic and onion powders and pepper.  Mix well, then rub on all sides of the roast.  Place in prepared IP and quickly sear on all sides. Turn off IP.  Pour the broth and liquid smoke over the roast.  Secure the lid on top with the valve in the sealed position. Press the meat/stew button on high pressure for 45 minutes. Once done, do a natural release.
Remove the beautiful roast on a cutting board and let it rest for 10 minutes.  After that, cut into thin slices (there will be a little pink in the middle, which means roast perfection :)
Once the roast is done, preheat the oven to 350 F.
Quickly make the dressing by whisking together all the ingredients.
To assemble the sandwiches, place each bun in the middle of a large piece of aluminum foil.  Spread both sides with a little dressing. Place a generous portion of cut up roast right on top of the dressing. Top with 1 or 2 slices of cheese and the top half of the bun.  
Wrap each sandwich tightly in the foil and place on a cookie sheet. 
Bake in preheated oven for about 20 minutes. Carefully unwrap and enjoy that goodness!!
