Pineapple-Banana Bread

This is a sweet, moist, simply delicious bread!  The combination between pineapple and banana is quite perfect.  Enjoy!
Recipe yields two large loaves
Ingredients:
-2 cups sugar
-3 large eggs
-1 1/4 cups vegetable oil
-2 tsp vanilla extract
-1 tsp salt
-1 tsp baking soda
-1 tsp cinnamon
-3 cups flour
-1 (8 0z) can pineapple chunks, well drained
-4 ripe bananas
Directions:
Preheat oven to 350 F.  Coat bottom and sides of large loaf pans with baking spray (the one with flour and butter).  Set aside.
In your electric mixer bowl, cream the sugar and eggs.  Add the oil, vanilla, salt, baking soda, cinnamon and flour, half of cup at a time.  Add the pineapple and mix on medium speed to break up the chunks a little.  Add the bananas and mix until nicely mashed, but still a bit chunky.
Divide batter evenly between the 2 prepared pans. 
Bake in preheated oven for 1 hour or until toothpick comes out clean.
Cool in pans on wire rack for 10 minutes.  Carefully, remove bread from pans and place back on wire rack to cool completely.  Slice and enjoy!
