Instant Pot Beef Stew
I have been wanting to make a stew in this baby since the moment I got it! And it is everything I hoped for: the beef is cooked to perfection; it came out so tender that it melts in your mouth! The veggies are perfectly cooked and the aromas are just amazing! Super serious comfort food! I love to serve stew with simple, hot mamaliga (cornmeal mush) as it soaks all the brothy goodness and it gives the dish even more heartiness. YUM!
Ingredients:
-2 Tbs flour
-2 tsp salt
-2 tsp pepper
-1 lb beef stew meat
-2 Tbs butter
-2 cups beef broth
-1/2 Tbs brown sugar
-1 Tbs Worcestershire sauce
-1 Tbs soy sauce
-2 Tbs tomato paste
-2 garlic cloves, minced
-1 lb potatoes, peeled and cut into chunks
-1/2 lb carrots, peeled and sliced
-8 oz crimini mushrooms, quartered
-1 tbs dehydrated onion
-fresh mamaliga (cornmeal mush)
Directions:
Place flour, salt and pepper in large zip up bag. Mix. Add the meat and stir until all evenly coated. Set aside.
Place the butter in the Instant Pot and set on saute. Once the butter is melted, add the meat. Cook, stirring occasionally, until nicely browned on all sides. Set the Pot on keep warm.
Add remaining ingredients (minus the mamaliga!) to the pot.
Give it a good stir. Cover and seal and close the steam valve. Press the stew function button. Once done (35 minutes), allow to naturally release the pressure. Open the valve carefully and open the lid.
Give the stew one last good stir and serve on top of fresh mamaliga. YUM! Enjoy!
