Bacon-Corn-Turkey Chowder
I had some leftover turkey that I chopped up and froze until ready to use. I decided that it would go wonderfully into a chowder and indeed, it did! This is a very easy, super flavorful dish and it comes together in under 30 minutes. Enjoy!
Ingredients:
-1 lb smoked, thick cut bacon, roughly chopped
-1 onion, finely diced
-4 cups chicken broth
-1/2 cup cornmeal
-16 oz frozen corn
-2 chipotle peppers in adobo sauce, pureed
-1 (4 oz) can diced green chiles, undrained
-2 cups cooked turkey, chopped or shredded
-1 1/2 cups heavy cream
-salt and pepper to taste
Directions:
In a large saucepan, cook the bacon until almost crisp. Add the onion, give it a good stir and cook for about 5 minutes. Add the broth and bring the mixture to a boil.
Ladle 1 cup of the hot broth mixture into a bowl. Add the cornmeal, mix well and let it sit for a couple of minutes.
Add cornmeal mixture to the pot. Add remaining ingredients. Give it a good stir and let it simmer for 10 minutes, stirring occasionally.
Ladle into bowls and enjoy!
