Coconut-Walnut "Snowballs"
These little"snowballs" make for the perfect treat! Every bite is a little piece of Heaven as these beauties melt on your tongue. Such a perfect, buttery mixture of sweetness! Enjoy!
Ingredients:
-3 sticks unsalted butter
-3/4 cup powdered sugar PLUS 1 more cup for dusting
-1 1/2 tsp vanilla extract
-1/2 tsp ground nutmeg
-1/2 tsp salt
-3 1/2 cups flour
-1/2 cup finely chopped walnuts
-1/2 cup sweetened coconut flakes
Directions:
Preheat oven to 350 F.
In a medium saucepan, melt the butter. Remove pan from stove. Add the 3/4 cup of powdered sugar, along with the vanilla, nutmeg and salt. Using a wooden spoon, mix well. Add the flour and mix until well incorporated. Lastly, add the walnuts and coconut and mix very well.
While the dough is warm, form little 1-2 inch balls with your hands and drop them on ungreased cookie sheets.
Bake in preheated oven for exactly 10 minutes. Do not allow them to brown!
Remove from oven and let them sit for 2 minutes, no more! Roll each cookie in powdered sugar, then place on wire rack (with pan on bottom, so as to not make a mess on your counter) and cool for 10-15 minutes.
Once cooled, roll each cookie again in powdered sugar. Place back on wire rack and let them cool for 5 more minutes.
Place in covered storing container. Enjoy!
