Instant Pot Beef Chili with Dry Beans
I just love my Instant Pot, especially that I can make dishes like this chili in such a short time. It took only 1 hour to cook the chili, including cooking the dry beans, which were not even soaked! Love it! The flavors are just wonderful in this and it's such a yummy, hearty dish. Yum! Enjoy!
Ingredients:
-4 cups beef broth
-1 lb dry pinto beans, sorted and rinsed
-3 Tbs chili powder, divided
-1 Tbs salt
-1 tsp pepper
-3 lbs ground beef
-1 onion, finely chopped
-4 cloves garlic, minced
-1 bell pepper, chopped
-3 tomatoes, chopped
-2 Tbs tomato paste
-3 cups water
-2 tsp dried oregano leaves
-2 tsp ground cumin
-2 tsp unsweetened cocoa powder
-1/2 tsp cayenne
For garnish: sour cream, shredded cheese, green onions, etc.
Directions:
Place the beef broth, rinsed beans, 2 Tbs of the chili powder, salt and pepper into your Instant Pot. Secure the lid and place the valve in the sealing position. Press the beans/chili button. It will cook for 30 minutes. Once done, do a quick release.
While that's cooking, brown the beef along with the onion and garlic. Drain.
Once the beans are done, add the beef mixture, along with the remaining Tbs of chili powder and all the other ingredients. Give it a good stir, secure the lid and valve, and press again the chili button. At the end of the 30 minutes of cook time, do a natural release.
Give it one more stir, ladle into bowls and top with your favorite toppings. Enjoy!
