Three Bean and Beef Chili

This chili is such a wonderful, filling meal on a cold night. It's hearty and super tasty.  Enjoy!
Ingredients:
-1 Tbs extra virgin olive oil;
-1 onion, finely diced
-1 red bell pepper, diced
-2 tsp ground cumin
-1 lb extra lean or lean ground beef
-1 (28 oz) can crushed tomatoes
-2 cups water
-2 chipotle chiles in adobo sauce, chopped
-1/2 tsp dried oregano leaves
-salt and pepper
-1 (15 oz can) black beans, rinsed and drained
-1 (15 oz can) kidney beans, rinsed and drained
-1 (15 oz can) pinto beans, rinsed and drained
Directions:
In a large sauce pan, heat the oil. Add the onion and bell pepper.  Stir and cook for about 10 minutes. Ad the cumin and cook for 1 minute.  Add the beef and cook, breaking up the meat as it cooks, until browned.  Stir in the tomatoes, water, adobo chiles, oregano, salt and pepper.  Give it a good stir and bring to a simmer.  Lower the heat, cover and cook, stirring occasionally, for 30 minutes.
Add the beans and continue simmering, covered, for another 20-30 minutes.  Adjust seasoning, if needed.
Serve with some sour cream and cheese on top. Enjoy!
