Pan Fried Whole Trout
This is another very quick dish to put together on a busy night. Don't be intimidated by a whole fish. Most stores sell them already scaled and gutted, so all you have to do is rinse them and prepare them. I served ours with some broccoli rice, and they were perfect together. Enjoy!
Ingredients:
-2 whole trout, cleaned with tails and heads on
-1/2 cup flour
-1/2 cup cornmeal
-1/2 tsp cayenne pepper
-1 tsp salt
-1 tsp pepper
-3 Tbs extra virgin olive oil
-lemon juice
Directions:
Heat the oil in large skillet.
In a shallow dish, combine flour, cornmeal, cayenne, salt and pepper. Dredge the fish to the mixture, on both sides. Add fish to hot skillet. Cook for about 5 minutes on each side, or until meat flakes with a fork. Remove from skillet and sprinkle with a little lemon juice. Enjoy!
