Lemon Cream Pie
If you love lemon, then this is the pie for you. The flavor is not overpowering, but it is absolutely amazing! The filling is wonderful even by itself, so you could serve it as a custard on the side, if desired. Still, the entire pie is absolutely delicious. You could serve it with some whipped cream, but I personally did not find that necessary. Enjoy
Ingredients:
-1 (9 inch) deep pie shell
-1 1/2 cups sugar
-1/2 cup cornstarch
-2 cups half-and half
-1/2 cup margarine
-1/2 cup freshly squeezed lemon juice (about 4 lemons)
-the zest of 1 lemon
-6 eggs yolks
-1 1/2 cups sour cream
Directions:
Bake the pie shell according to package directions.
While that's cooking, mix in a saucepan the sugar, cornstarch, half-and-half, margarine, lemon juice, lemon zest, and egg yolks. Stir well oven medium heat until the mixture thickens and boils. Remove from heat.
Add sour cream and mix well. Pour mixture into baked pie shell. Cover and place in refrigerator until set. Enjoy!
