Kung Pao Chicken

This dish is so amazingly delicious!  It's spicy (which I love), salty, savory, and simply delicious.  Enjoy!
Ingredients:
-1 lb boneless skinless chicken breasts or thighs, cut into small chunks
-1 Tbs cornstarch
-2 tsp sesame oil
-3-4 green onions, minced
-3 garlic cloves, minced
-1/2 tsp crushed red pepper flakes
-1/2 tsp ground ginger
-2 Tbs rice wine vinegar
-2 Tbs soy sauce
-2 tsp sugar
-1/3 cup dry roasted peanuts
Directions:
Heat sesame oil in large saute pan or wok.  Toss the chicken chunks into cornstarch.  Add chicken to hot sesame oil.  Stir fry for 5-7 minutes, or until chicken is cooked through.  Remove chicken from heat, leaving the juices in the pan.
Combine vinegar, soy sauce and sugar in a small bowl.  Mix well.
To the pan add onion, garlic, red pepper flakes and ginger.  Stir fry for about 15  seconds.  Add vinegar mixture to pan.  Return chicken and coat with sauce.  Stir in peanuts.  Cook for about 5 more minutes.  Serve hot over rice.  Enjoy!
