Mediterranean-Style Pork and Shrimp with Veggies
Every bite is an explosion of flavors! This is super easy to put together, quick and absolutely delicious. Enjoy!
-olive oil cooking spray
-salt
-pepper
-paprika
-dried parsley
-12 oz extra large shrimp, peeled, deveined, with tails removed
-1 lb pork, boneless, cut into chunks
-1 large red onion, halved and sliced
-1 lb asparagus, trimmed and cut into chunks
-2 cloves garlic, minced
-1 lemon, juiced
-feta cheese chunks
-kalamata olives, pitted and halved
For orzo:
-1 cup orzo
-2 Tbs extra virgin olive oil
-salt and pepper
Directions:
Preheat oven to 450 F.
Coat the bottom of large baking sheet with olive oil cooking spray. Sprinkle with salt, pepper, paprika, and dried parsley. In a single layer, arrange the shrimp, pork, onion, and asparagus. Sprinkle the minced garlic on top and drizzle the lemon juice evenly on top. Coat everything with olive oil cooking spray. Season with salt, pepper, paprika, and parsley on top.
Roast in preheated oven for 10 minutes, then broil on HIGH for 3 minutes.
While that's roasting, cook the orzo according to package instructions. Drain, then toss with the olive oil and season with salt and pepper. Give it a good stir.
To serve, scoop a little prepared orzo onto the plate. Top with the pork-shrimp-veggie mixture. Top with some chunks of feta and kalamata olives. YUM! Enjoy!
