Instant Pot Cheesy Chicken, Rice and Veggies

 What a great, easy dish this is! It's very tasty, full of goodness and quite hearty. Enjoy!

Ingredients:
-olive oil cooking spray
-2 large chicken breasts, skinless, boneless, cut into chunks
-1 tsp salt
-1 tsp pepper
-1 tsp garlic powder
-2 cups rice
-2 cups chicken broth
-1 cup water
-1 (10 3/4 oz) can cream of chicken soup
-2 cups shredded cheddar cheese
-1 (12 oz) bag frozen mixed vegetables
Directions:
Generously coat the bottom of your IP with the olive oil cooking spray. Set to saute. When hot, add the chicken chunks and season with the salt, pepper, and garlic powder. When the chicken starts to brown, stir in the rice. Cook for a couple of minutes.
Turn off the IP and add the broth and water. Give it a good stir. Cover, securing the lid on with the valve in the sealed position. Set to manual HIGH for 8 minutes.
Do a quick release. Remove the lid and stir in the soup, cheese, and veggies. Mix very well until cheese is melted and veggies are warm. YUM! Enjoy!
