Instant Pot Ham and Corn Rice

 Easy and delicious, this dish is perfect for the end of a busy day. The flavors are great together and the dish is nice and hearty. Enjoy!

Ingredients:
-2 Tbs extra virgin olive oil
-2 small shallots, finely diced
-1 1/2 cups long grain rice
-1 cup white cooking wine
-2 garlic cloves, minced
-1 tsp salt
-1/2 tsp pepper
-5 cups chicken broth
-12 oz frozen corn
-1 cup cubed ham
-1 cup shredded pepper jack cheese
Directions:
Set your Instant Pot on saute. Add the oil. When hot, add the shallots and rice. Give it a good stir and cook for 3-5 minutes or until rice looks translucent. Add the wine and garlic. Give it a good stir and cook for a couple of minutes or until the wine has evaporated. 
Turn off the IP.
Add the salt, pepper, broth, corn, and ham. Mix well. Secure the lid on top with the valve in the sealed position. Cook on manual HIGH pressure for 8 minutes. Do a quick release.
Remove inner pot from IP. Stir the rice mixture, then add the cheese. Mix well and let it sit for a few minutes. Enjoy!
