Asian Inspired Shrimp Salad Sandwiches

 Easy, packed with flavor, and absolutely delicious! So, so good! Enjoy!

Ingredients:
-12 oz extra small shrimp, COOKED, peeled, deveined, with tails removed
-1 cup cherry tomatoes, halved
-1 bunch green onions, cleaned and chopped
-1/4 cup mayonnaise
-2 tsp rice vinegar
-1/2 tsp sesame oil
-1/4 tsp salt
-1/4 tsp pepper
-brioche buns
-mayo
-spring greens
Directions:
In a bowl, combine the shrimp, tomatoes, green onions, mayo, vinegar, sesame oil, salt and pepper. Mix very well.
Toast the brioche buns. Spread a little mayo on them, then top with some spring green and the shrimp salad. YUM! Enjoy!
