Coconut Custard Pie

 So easy and so delicious! We enjoyed this one quite a bit. Enjoy!

Ingredients:
-1 (9 inch) deep dish frozen pie crust
-1 cup sweetened coconut flakes
-3 large eggs
-1/4 cup sugar
-1/4 tsp cinnamon
-1/4 tsp ground nutmeg
-1/4 tsp vanilla extract
-1/8 tsp salt
-1/2 cup half and half
-1 1/4 cups milk (at least 2%)
Directions:
Preheat oven to 400 F. Line a cookie sheet with foil. Place frozen pie crust on top. Add the coconut on the bottom of the pie shell, spreading it evenly.
In a bowl, beat the eggs. Add the remaining ingredients. Whisk until well combined. Pour on top of the coconut, making sure to cover it completely.
Bake in preheated oven for 50 minutes or until toothpick comes out clean.
Let it cool, the enjoy with some whipped cream on top. Enjoy!
