Lexie's Sweet and Sour Chicken
Ingredients:
-3 chicken breasts, skinless, boneless, cut into chunks
-1 cup cornstarch
-1 tsp salt
-1 tsp pepper
-3 large eggs, beaten
-oil for frying
For the sauce:
-1/2 cup sugar
-1 tsp garlic powder
-1/4 cup ketchup
-1/2 cup apple cider vinegar
-1 Tbs soy sauce
Directions:
Pour cornstarch, salt, and pepper in a ziploc bag and mix well. Add the chicken chunks and toss to coat.
Heat oil in a large skillet.
Dip the chicken chunks in the beaten eggs, then carefully place in hot oil. You will do this in batches as to not overcrowd the chicken. Once golden brown, remove from skillet onto paper towel lined plate.
Once all the chicken is fried, preheat the oven to 350 F.
Place chicken in single layer on the bottom of 9x13 baking dish.
Quickly whisk all sauce ingredients, then pour over chicken. Stir to coat evenly.
Bake in preheated oven for 30 minutes. Serve on top of rice. YUM! Enjoy!
