Cherry-Chocolate-Walnuts Bread
Ingredients:
-1 stick unsalted butter, at room temperature
-1 cup sugar
-2 large eggs
-1/2 cup sour cream
-1 Tbs vanilla extract
-6 Tbs unsweetened cocoa powder
-1 tsp baking powder
-1/2 tsp baking soda
-1/4 tsp cinnamon
-a pinch of salt
-1 ripe banana, peeled
-6 oz dried cherries
-1.5 cups flour
-1 cup chopped walnuts
Directions:
Preheat oven to 350 F. Coat the bottom and sides of a large loaf pan with baking spray (the one with flour and butter). Set aside.
Cream the butter and sugar. Add the eggs, one at a time. Stir in the sour cream, vanilla, cocoa, baking powder, baking soda, cinnamon, and salt. Mix very well, then add chunks of the banana. Stir in the cherries. Add the flour, half of cup at a time. Finally, stir in the walnuts.
Pour mixture into prepared pan.
Bake in preheated oven for 1 hour or until the toothpick comes out clean.
Cool in pan, on wire rack for 15 minutes. Carefully take the bread out of pan and cool completely on wire rack. Slice and enjoy!
