Easy Broccoli-Cheddar Soup
This is one of our family's favorites. It's quick, easy and super delicious! We like to enjoy this with some yummy cornbread on the side, but regular rolls or hot bread would do just fine. So good! Enjoy!
Ingredients:
-1 onion, finely chopped
-1 large head broccoli, chopped
-1.5 lbs (about 3-4) potatoes, peeled and chopped
-1/2 cup flour
-6 cups chicken broth
-2 tsp salt
-1.5 tsp pepper
-1/4 tsp nutmeg
-2 tsp Worcestershire sauce
-2 cups heavy cream
-2 cups shredded Cheddar cheese
Directions:
Generously coat the bottom of large sauce pan with cooking spray. Over medium heat, add the onion, broccoli and potatoes. Give it a good stir and cook for 5-7 minutes or until the veggies soften.
Sprinkle the flour on top, stir well, and cook for a couple of minutes. Add the broth, salt, pepper, nutmeg and Worcestershire sauce.
Bring to a boil. Reduce heat and let it simmer for 10-15 minutes or until thickened.
Stir in the cream and cheese. Once the cheese is all melted, turn off the stove and ladle that goodness into bowls. YUM! Enjoy!
